BASED ON RED ORANGES
The “Red Oranges of Sicily IGP” are protagonists of the recipe of AMARA, a fruit unique in the world because it is born in a special volcanic context, characterized by a singular terrain at those latitudes and by strong thermal excursions that condition the growth of plants with extraordinary properties which make the AMARA bottles even more special.

RED IS BORN
IT DOESN'T BECOME
The red color of oranges, cultivated and used to produce AMARA, depends on the exclusive combination of two factors. On the one hand the presence of anthocyanins and on the other the climatic conditions of Etna. Here, oranges are born red due to the reaction of these substances to temperature changes in the winter period. At the slopes of Etna, between November and March, it passes, in fact, from 5-6 degrees of the night to 20 degrees of the day.


THE CHARACTERISTIC
SPIRAL CUT
We work with white gloves, peeling oranges one by one with the typical spiral cut. This type of cut was used to peel the oranges, turning slowly around the fruit. Once cut, the peel was hung on the tree branch to dry it, and once dried, it was used as a spice in the kitchen for sweet or savory dishes.
